Chicken and Fresh Grapefruit Stir Fry

| 1 | grapefruit, peeled and sectioned; reserve juice | |
| 1 | can | (8 ounce) pineapple chunks, drained; reserve juice |
| 1 | Tablespoon | cornstarch |
| 1 | teaspoon | reduced sodium soy sauce |
| 1/2 | tablespoon | vegetable oil |
| 2 | (1/2 pound) boneless skinless chicken breast halves, cut into 1/2- inch strips | |
| 1 | medium clove garlic, minced | |
| 1/4 | pound | snow peas, trimmed |
| 2 | green onions, sliced diagonally | |
| Hot cooked rice |
Place grapefruit sections and pineapple chunks in a bowl and set aside. Combine grapefruit juice and pineapple juice and add enough water to equal 1 cup liquid. Whisk cornstarch and soy sauce into juice mixture.
Heat oil in a large skillet over medium heat. Stir-fry chicken for 3 minutes. Add garlic and continue cooking for 2 minutes longer or until lightly browned.
Add snow peas and juice mixture; cook, stirring until thickened. Add grapefruit, pineapple and green onions and cook until heated through.
Serve over hot rice.
