Apple Salsa

Delicious served over fish, chicken or turkey

Yield: Makes 3 cups

Ingredients

2 medium red apples
2 tablespoons lime juice
1/2 cup chopped orange segments
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1 jalapeno, washed, seeded, finely chopped
1 clove garlic, peeled and minced
2 tablespoons chopped fresh cilantro
1 tablespoon cider vinegar
1/2 teaspoon ground cumin
1 teaspoon vegetable oil

Directions:

Core and dice the apples into 1/4 inch pieces. Place in a medium bowl and toss immediately with lime juice. Stir in the orange segments, onions, green pepper, jalapeno, garlic, cilantro, cider vinegar, cumin and oil. Chill 2 hours before serving. Serve over fish, chicken or turkey.
