Chocolate Peanut Butter Ice Cream Sandwiches

Ingredients

2 tablespoons creamy peanut butter
8 chocolate wafer cookies
2/3 cup vanilla ice cream (sugar free)

Directions:

Spread peanut butter over flat side of all cookies. Spoon ice cream over the peanut butter on 4 cookies. Close sandwiches with remaining 4 cookies, peanut butter side down.

Place each cookie sandwich on small sheet of aluminum foil. Wrap sides of foil up and over top of sandwiches. Press down lightly to force ice cream out to edges of sandwich. Seal foil tightly. Freeze at least 2 hours before serving.
