Corn Salsa

Yield: 4 servings

Ingredients

1 cup frozen corn, thawed
1/2 cup green pepper, chopped
1/4 cup red onion, chopped
2 teaspoons fresh parsley, minced
1 tablespoon lime juice
1 clove garlic, minced
1/8 teaspoon salt
1/8 teaspoon pepper

Directions:

In a bowl combine corn, green pepper, onion, parsley, juice, garlic, salt and pepper; mix well. Chill for at least 2 hours to blend flavors. Serve with fish.
