Feta and Tomato Tart

Add ham or bacon to the recipe for a different taste! Also delicious cold.

Yield: 4 to 6 servings

Ingredients

3 medium tomatoes, peeled and sliced
1 (9- inch) unbaked pie shell
3/4 cup mayonnaise
1 package (6 ounce) crumbled feta cheese, plain
1 cup sliced mushrooms
1 Tablespoon chopped onion
1 Tablespoon chopped green bell pepper
1/4 cup chopped fresh basil
Salt to taste
Pepper to taste

Directions:

Arrange half of tomato slices in pie shell.

Combine mayonnaise, feta, mushrooms, onion, green pepper and basil, stirring well. Spread half of mixture over tomato slices. Repeat layers with remaining tomatoes and mayonnaise mixture.

Bake at 350 degrees F for 30 to 35 minutes. Set aside and allow to cool for 10 to 15 minutes before serving.
